Should I paint my clay before or after I sculpt it?

You are misusing the word "sculpt" which confuses us. Sculpting is shaping the clay, plastic, wood, etc. If seems like you are making parts and them putting them together like a plastic model of a car or soldier and calling the putting together sculpting, which most of us would call assembly.
